MODO DE PREPARO:

FILÉ MIGNON: Misture o sal e o açúcar e tempere o filé Fripai. Coloque-o em uma grade e leve a geladeira. Deixe-o guardado sem cobertura por três dias.

MIL FOLHAS DE MANDIOCA: Pique a mandioca em lâminas bem finas. Derreta a manteiga e acrescente o queijo coalho ralado e um pouco de sal. Envolva a mandioca na mistura de manteiga, disponha tudo em um tabuleiro, cubra com papel alumínio e asse durante 1 hora. Depois, retire o papel alumínio e asse por mais 30 minutos. Retire do forno e deixe esfriar. Depois, quando estiver frio, corte no tamanho e formato desejado.

ESPUMA DE MANTEIGA DE GARRAFA: Coloque a mandioca cozida e a manteiga de garrafa no creme de leite para ferver. Quando chegar a este ponto, triture tudo com um mixer até ficar bem liso e acrescente o sal. Para ficar na textura de espuma, disponha em um sifão de chantilly com uma carga de gás. Caso não tenha o sifão, use o creme mais espesso na base do mil folhas de mandioca, para que o prato tenha o toque de cremosidade.

PREPARANDO O PRATO: Quando chegar a hora de preparar o prato, corte a peça em seis tornedores com aproximadamente 220g. Sele a carne na manteiga e leve ao forno pro mais 9 minutos, em temperatura de 180ºC. Depois, parta cada tornedor ao meio. Sele o mil folhas também na manteiga e leve ao forno para aquecer juntamente com o filé Fripai curado. Finalize a montagem do prato com os três elementos, uma erva verde a gosto e um pouco de molho de carne. Bom apetite!
